Anzac biscuits

Ingredients

1 cup rolled oats

1 cup self-raising flour

1 cup shredded coconut

1 cup soft brown sugar

1/4 cup golden syrup or treacle and syrup mixed. (if using treacle, use white sugar, not brown)

125 g butter

2 tbsp boiling water

1/2 teaspoon bicarbonate of soda or 1 teaspoon baking powder



Preheat oven to 160°C fanbake and line 2 oven trays with baking paper for easy clean-up.

Combine rolled oats, flour, coconut and sugar in a large bowl.

Heat together butter, golden syrup and water until butter melts.

Stir in baking soda, then mix into dry ingredients until well combined.

 

Roll mixture into balls slightly smaller than a golf ball and place on trays, allowing room for spreading.

For crunchy biscuits with a chewy centre, lightly flatten with a fork and bake 15 minutes.

Allow to cool on the trays (they will harden on cooling).

 

They will keep for several weeks in an airtight container.

Oat slices

Melt together:
125 g margarine
2 tbs honey or golden syrup

Stir in:
1 - 1 1/2 cup oats
1 cup mixed seeds eg pumpkin, sunflower, linseed
1/4 cup dark brown sugar
1/2 cup self-raising flour
2 teaspoons ginger, optional
1 large tablespoon ground flaxseed
1/2 cup coconut optional

Bake in lamington tin or two small 20cm square tins for 15 - 20 minutes.

Anzac biscuits

Annabel Langbein's recipe...

I tried the 'flattening' so they would be chewy on the inside, and baked for the required 20 minutes, but think that 15 minutes next time would probably be better.

  • 1 cup wholegrain rolled oats
  • 1 cup flour
  • 1 cup thread coconut
  • 1 cup soft brown sugar
  • ¼ cup golden syrup
  • 125g butter
  • 2 tbsp boiling water
  • ½ tsp baking soda
Preheat oven to 160°C fanbake and line 2 oven trays with baking paper for easy clean-up.
Combine rolled oats, flour, coconut and sugar in a large bowl. Heat together golden syrup, butter and boiling water until butter melts. Stir in soda, then mix into dry ingredients until well combined.
Roll mixture into balls slightly smaller than a golf ball and place on trays, allowing a little room for spreading. For biscuits that are crunchy on the outside but a little chewy inside, lightly flatten with a fork or damp fingers and bake until lightly golden (about 20 minutes). For chunky, super-hard biscuits, bake for about 30 minutes. For very crunchy thin biscuits, press dough very flat and bake for about 15 minutes. 
Tip: If you don't have golden syrup you can use honey or maple syrup instead.

Oatmeal raisin cookies

My Favorite Oatmeal Raisin Cookies
Ingredients
  • 4 ½ cups old-fashioned oats (not quick-cooking)
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 ½ teaspoons salt
  • 1 cup raisins
  • 1 cup dried cranberries
  • 1 cup plus 2 tablespoons butter, room temperature
  • 1 ½ cups packed dark brown sugar
  • 3 eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1 ½ cups toasted chopped pecans
Instructions
  1. Preheat oven to 350 degrees.
  2. Line baking sheets with parchment paper.
  3. In a mixing bowl, whisk together oats, flour, cinnamon, baking soda, baking powder and salt.
  4. Add the raisins and cranberries and stir to coat.
  5. In a large mixing bowl, beat the butter and brown sugar together for 2 minutes or until light and fluffy.
  6. Add the eggs and vanilla and beat another minutes.
  7. Add the flour mixture and beat until completely incorporated.
  8. Add the toasted pecans and beat just until distributed.
  9. Drop two-tablespoon-size blobs onto prepared baking sheet, 2 inches apart.
  10. Bake 12-15 minutes or until golden around the edges and barely set in the center.
  11. Remove from oven and place pan on a cooling rack for two minutes.
  12. Remove cookies from the pan and allow to cool completely on the rack.
  13. Store cookies in tightly sealed container.

Oat Cakes (Oat biscuits)

225g oats, whizzed until finely ground in food processor.
60g (wholewheat) flour
1/2 tsp bicarbonate of soda
60g butter
1 tsp salt

Mix ingredients all together to fine crumbs.

Add 60-80ml hot water from the kettle to a stiff paste.

Let cool a little, then roll out thinly. Cut into rounds. Bake on a dry baking sheet at 190 degrees C for 20 - 30 minutes until golden brown.  Cool on airing rack.
